Herb Roasted Potatoes

Delicious Side Dish Recipe

I wanted to share a great recipe for Herb Roasted Potatoes. I make this for my family quite frequently and they always love it. It's definitely a favorite in our home!

INGREDIENTS:
  • Approximately 2lbs. of washed potatoes diced or cubed (Red is preferred, but this could be done with any type of potato)
  • 1/8 to 1/4 Cup Olive Oil
  • 1 Tablespoon Minced Garlic
  • 1/2 Teaspoon Basil
  • 1/2 Teaspoon Thyme
  • 1/2 Teaspoon Marjoram
  • 1/2 Teaspoon Oregano
  • 1/2 Teaspoon. Parsley
  • 1/2 Teaspoon Red Pepper Flakes
  • 1/2 Teaspoon Salt

DIRECTIONS:
  1. Preheat over to 475 degrees
  2. Mix potatoes, oil, and spices together in a large bowl and transfer to a baking pan.
  3. Bake anywhere from 35 to 45 minutes (depending on your oven).
  4. Be sure to check and turn potatoes occasionally while they are baking.

That's the beauty of this one, because you can alter the seasonings to your liking. I sometimes add a little extra minced garlic and marjoram to mine. It's a very flexible recipe. Have a great weekend, and thanks for stopping by!

Mmmm, this sounds so good with all those herbs! I need to try this recipe soon but will omit the red pepper flakes since I don't like spicy food and it doesn't like me.

Thank you for stopping by. You can omit the red pepper flakes and it will be just as good. That is what I began doing when my toddler started eating these. If you still want some pepper for flavor, then a little black pepper works well. Either way, they'll still come out yummy! :-)
