Homemade Pancakes

Tired of the typical pre-made pancake mixes? Need a change to your flapjack routine? I wanted to go ahead and share my recipe for delicious fluffy homemade pancakes.



1 ½ cups of flour
2 tbsp sugar
2 tsp baking powder
½ tsp baking soda
½ tsp salt
1¼ cups of milk
2 eggs
1 tsp vanilla
2 tbsp oil (vegetable, olive, or whatever your preference is.)


  • In one bowl, beat all of the wet ingredients together
  • In a separate bowl, mix all of the dry ingredients together
  • Pour combined wet ingredients into dry ingredients bowl and mix gently until everything is blended together. (be careful not to beat or over mix. Doing so could lead to tougher pancakes)
  • Pour desired portions onto hot greased skillet or griddle and cook both sides until done.     

Enjoy with some hot syrup and butter, if desired!!

* For a delicious twist, I like to use ground cinnamon. You can add as much as desired into your combined dry ingredients bowl. I am usually very generous with my portions, as we all love cinnamon in my home. Plus, it’s good for you!

Here's a tip:
If you want to speed up your morning breakfast routine, you can premix all of the dry ingredients together ahead of time, and store in an air-tight container for later use. When you are ready to make your pancakes, just combine the dry mix with the wet ingredients and you're good to go!
