Lemon Chicken Primavera {With Knorr Homestyle Chicken Stock}


A few days ago I let posted about my Smiley360 Knorr Mission (please see Smiley360 and My Most Recent Mission) and the delicious recipes that I made using the complimentary Knorr Homestyle Chicken Stock. I wanted to share this great recipe for Lemon Chicken Primavera, which came out delicious! I received the main recipe in my mission package, but I had made a few revisions of my own.

Here is my version of Lemon Chicken Primavera using Knorr Homestyle Stock:


  • 1/3 cup of all-purpose flour
  • 1 tsp. ground black pepper
  • 1 to 1.5 lb. boneless, chicken tenders (pounded thin)
  • 2 eggs, lightly beaten
  • 3 Tbsp. butter, divided
  • 1 small onion, finely chopped
  • 1 cup of water
  • 2 to 3 Tbsp. lemon juice
  • 1 tub Knorr Homestyle Chicken Stock
  • 6 to 8 ounces of fresh asparagus, cut into ½ to 1 inch-thick diagonal slices (for variation, you could also use broccoli, instead)
  • More Salt and pepper to taste

  1. Mix flour with pepper in shallow dish.
  2. Dip each chicken tender in the beaten eggs, then into the into the flour mixture, and set aside.
  3. Melt 2 tablespoons butter into a skillet over medium-high heat.
  4. Cook chicken until browned, then remove from skillet and set aside.
  5. Melt 1 tablespoon of butter in the same skillet over medium heat and cook chopped onions until tender
  6. Stir in water and Knorr Homestyle Chicken Stock until it is melted.
  7. Bring to a boil over high heat, stirring frequently.
  8. Add asparagus and return chicken to skillet.
  9. Reduce heat to low and simmer until chicken is thoroughly cooked and asparagus is tender.
  10. Stir in lemon juice
  11. Add salt and pepper to taste
  12. Serve over rice or by itself.

For a long time I never even liked asparagus, but as I got older I started enjoying it more. This was a pretty yummy dish, too.

I love Lemon Chicken! I've never tried it with asparagus but it sounds good. Our girls didn't like asparagus when I used to steam/boil it. But once I started baking it in the oven with a little olive oil they love it :)

If you had asked me ten years ago what is the one vegetable that I wouldn't touch with a ten foot pole, my answer would be "asparagus." I just detested the taste. I started finding new ways to cook and season it, and that seemed to really do the trick. Of course my taste for things has changed as I got older and older, so that helps, too. I'm glad that you finally found a way to get your girls to enjoy it. With children, it can be a bit of trial and error, lol! This is a tasty dish and the asparagus is delicious in it!
